Strawberry Cucumber Ribbon Salad and Mocktails

Such a perfect recipe for summer- light, easy, plant-based, and colorful!

Serves 4, takes 15 min!

  • 2 large cucumbers (make ribbons using a peeler)
  • 1 cup slices strawberries
  • 1/2 cup crumbled goat cheese
  • 3/4 cup sliced snow peas
  • 1/2 cup sliced almonds (I left these out)
  • lemon juice and olive oil for dressing
  • salt and pepper to taste

Testing out mocktails (experimentation encouraged!)

Here’s what I used:

  • tangerine juice
  • sparkling water
  • lemon juice
  • coconut water
  • sprig of rosemary, mint, or basil
  • freeze-dried strawberries
  • shredded coconut and honey for the rim
