Such a perfect recipe for summer- light, easy, plant-based, and colorful!

Serves 4, takes 15 min!
- 2 large cucumbers (make ribbons using a peeler)
- 1 cup slices strawberries
- 1/2 cup crumbled goat cheese
- 3/4 cup sliced snow peas
- 1/2 cup sliced almonds (I left these out)
- lemon juice and olive oil for dressing
- salt and pepper to taste
Testing out mocktails (experimentation encouraged!)
Here’s what I used:
- tangerine juice
- sparkling water
- lemon juice
- coconut water
- sprig of rosemary, mint, or basil
- freeze-dried strawberries
- shredded coconut and honey for the rim
