Uncomplicated and perfect for salads, sandwiches, and more!

- one red onion
- 3/4 cup red, white or apple cider vinegar
- 1/4 cup water
- 2 tsp salt
- 2 tsp sugar
- 1 pint (ish) heat proof can
Bring vinegar, water, salt and sugar to boil in a small sauce pan
Pour over thinly sliced red onions in jar
Press down onions and shake gently before letting cool to room temp
Store in fridge for up to a week or 2 (or serve on the spot after 30 minutes of cooling!)
