Tacos & Caprese

Serves 5 (ish)

Ingredients:

  • 1 can black beans
  • 1 block of tofu
  • 4-6 corn tortillas
  • salsa
  • tomatoes
  • 1/2 red onion
  • 1 bell pepper
  • 2 avocados
  • lettuce
  • 1 lime
  • chickpeas (optional)
  • spices(salt, pepper, chili powder, oregano, etc)
  1. chop peppers and tomatoes to have as toppings (can make your own pico also)
  2. mash avocados, chop red onion squeeze lime juice, and add some tomatoes and some red onion all in a bowl for guacamole
  3. warm black beans on stove with a splash of salsa
  4. chop tofu into thin pieces and pan-fry with olive oil and spices of your choosing
  5. add red onion to pan and stir till tofu and onions are cooked through/crisp
  6. warm corn tortillas
  7. place toppings and proteins in separate bowls
  8. assemble and enjoy!

+ side’s ingredients:

  • large red tomato
  • mozzarella
  • basil
  • balsamic vinegar

Simply slice tomato and mozzarella with similar widths and stack each piece separately with a basil leaf, drizzle the balsamic, and enjoy.
