Takes 15 min tops, this side dish or snack is perfect for a hot summer day!
- Serves around 4
- Ingredients:
- 3-4 mini cucumbers or 1-2 full-size cucumbers
- 1 shallot or part of a red onion (to your liking)
- 1 red pepper
- 1 lemon (squeeze into juice)
- salt and pepper
- optional: any other spices (I also added crunchy corn chips)
- Slice vegetables into desired size
- Mix all ingredients in a bowl
- Enjoy!
